savory - winter savory

winter savory or Satureja montana

Product Image
This low-growing, semi-evergreen herb has been used for both medicinal and culinary purposes for a couple of centuries. The leaves are very aromatic and are said to be able to help aid digestion and bee stings, but they also can be used to flavour meat dishes, marinades and stuffing.

Winter savory (Satureja montana) is also a pretty plant, making it ideal for patio pots or front of border positions.

How to care for Satureja montana:

Winter savory grows best in full sun and well-drained, poorer soils, so avoid enriching the ground too much. Plant in a warm, sheltered position and water only until established, as it dislikes sitting wet. Keep pinching back the tips through summer to maintain a compact shape and encourage fresh leafy growth.

You can harvest the leaves at any time, but the flavour is strongest just before flowering. Trim lightly after flowering to keep the plant tidy, and avoid hard pruning in winter as it can be slow to recover.
